In Sweet Starts second book, "Brownies With Brooke" she uses two types of cocoa powder to make her brownies. The two types are : unsweetened dutch cocoa powder and dark cocoa powder. But what is the difference you may ask? Unsweetened dutch cocoa powder is the more dense/bitter cocoa powder, while dark cocoa powder is less bitter and sometimes has a more mild flavor. That being said, in "caffeine" terms, dark cocoa powder actually has more caffeine! Dark cocoa powder has about 12 mg per tablespoon while unsweetened dutch cocoa powder has about 6 mg per tablespoon. If you are about to go to sleep after eating your brownies, maybe stick with the unsweetened dutch ;)
